The winery has its own analysis laboratory to monitor strict production protocols, it also has its own automated bottling line with a capacity of more than 1,200 bottles per hour.
In the grinding area, a selection table customized by the manufacturer is used to meet the requirements of the winery. The ground grape goes down by gravity to the stainless steel tanks where there is a different fermentation protocol, yeasts and temperatures depending on the strain.
The wines are refined in French oak barrels and casks with periods ranging from 8 to 18 months depending on the finished product. The cellar is excavated in granite at a depth of 7 meters to maintain the necessary temperature and humidity. All Villa Montefiori wines are kept in this quiet, discreet, dark and cool environment.
